Campervan Cooking – Blanketed Beef

Recipe

About 500g of fillet
Olive oil
Parmesan cheese (grated or dry).

For the blanket

3 cups brown bread wheat flour
1 cup tepid water
1 teaspoon dried yeast
Salt (one teaspoon)

Method

Add 3 cups of flour to a mixing bowl,  add 1 teaspoon of salt and mix in to the dry ingredients.

In a glass jug, add the tepid water (not too hot or you will kill the yeast) and dried yeast.  Mix until yeast dissolved.  Pour the water/yeast mixture into a mixing bowl and gradually add the dry ingredients and mix with either your hand or a wooden spoon.  The dough musn’t be sticky, must be firm to touch.  Once mixed satisfactorily, then roll into a ball, leave in mixing bowl and cover with clingwrap.  Leave in a warm, dry place for up to an hour so it rises.

Once the bread has risen satisfactorily, either roll the dough out or use your hands to spread out big enough to cover the beef fillet.  Add the fillet to the middle of the dough blanket and cover the fillet with a little olive oil and a sprinkle of parmesan.  Cover the fillet on all sides, so it is fully covered by the bread dough.  No holes must be visible.  Place the blanketed beef into a conventional oven at 200 degrees F for about 60 to 90 minutes, or until dough is brown and crispy.   If using a cadac gas dome then the process takes up to about 2-2.5 hours to cook through.

Can be served with a thick gravy and veggies of your choice.
