You will need the following:
Either an electric frying pan, a pot on a stove, or a normal fry pan.
900 grams of beef (either topside, fillet, sirloin or other good graded beef) cut into bit size chunks.
A tin of chopped tomatoes in their juice
2 onions finely chopped
1 and a half cups of brown lentils (they don’t need to be soaked beforehand)
Pkt of tomato paste
Pkt of hearty beef soup (dissolved in 850mls of hot water).
1 and a half cups of red wine (any inexpensive wine will do)
Salt and pepper
Olive oil
Good grade butter
In a pan, melt a tablespoon of butter with a glug of olive oil, even using a non stick pan, I like to keep it non stickable. Once melted, add the chopped onions. Allow to become translucent, not brown, then add the beef. Allow the beef to just take on a hint of brown, don’t cook through completely. Once the beef is a nice brown colour, add the tinned tomatoes and tomato paste. Allow these ingredients to cook. Add the lentils, as these will thicken the eclectic beef dish to a suitable consistancy. Remember to stir frequently to prevent burning. Next, add the red wine and allow to simmer for about 15 minutes, stirring when necessary, so keep checking. Lastly add some of the hearty beef soup mixture. The eclectic beef will now take on a lovely tomatoey/beefy consistency. It is not necessary to use all the hearty beef soup mixture, this will depend on how much liquid is in the beef dish and how you like it, more runny or thicker, the choice is yours. The more hearty beef soup you add, the thicker it will be. The lentils will take the longest to become soft, so let is simmer on a very low heat, until soft, but make sure you check and stir so that it doesn’t burn. If the mixture is very thick then add some water, rather than the balance of the hearty beef soup mixture.
In my recipe, I used pita breads because that is all the local store had, however you can also serve with rice and a salad, or just plain old bagette, or even a naan bread. Goes fabulously with creamy mash, to soak up all those delicious juices.
